One pre-made refrigerated pie crust
2 cups 1% milk
½ cup sugar
1 T butter
1 3 inch cinnamon stick
1 ½ tablespoons cornstarch
1 T all-purpose flour
½ t vanilla extract
¼ t almond extract
¼ t ground cinnamon

1. Preheat oven to 450 degrees
2. Pierce bottom of dough with a fork
3. Combine milk, sugar, butter, and cinnamon stick in a small saucepan
4. Place milk over medium heat and bring just to a simmer
5. Reduce heat to low and remove from heat
6. Combine cornstarch, flour, salt, and eggs in a small bowl
7. Stir with a whisk until well blended
8. Gradually add half of milk mixture to egg yolk mixture stirring constantly with a whisk
9. Stir egg mixture into remaining milk mixture in pan
10. Place over medium heat, and cook 1 minute or until thick, stirring constantly.
11. Remove from heat
12. Stir in vanilla and almond extract
13. Throw out cinnamon stick
14. Pour custard into pie crust
15. Sprinkle with ground cinnamon
16. Bake at 325 degrees for 30 minutes or until set
17. Cool on wire rack
18. Serve at room temperature
19. Store in refrigerator
