Brian's Famous Chocolate Chewies (cookies)

* 3 egg whites
* 2 cups pecans (pecan pieces work best)
* ¼ cup + 2 tablespoon cocoa
* 2 ¼ cups powdered sugar
* 1 teaspoon vanilla extract

Heat over to 325 degrees. Line cookie sheet pans with wax paper. Grease pans with butter instead as another yummy option. Mix dry ingredients using electric mixer. Add eggs slowly and blend until mix is wet. Be careful as the cocoa may poof out and make a mess. Mix on medium speed until well blended. Mix for about 2 minutes. Batter will be thick and gluey. For best results, use your hand to dip out the cookie drops. Or use a spoon if you aren’t a pro. Bake on middle oven rack for 15 – 18 minutes. Enjoy!
